★ This little chopper is incredibly easy to use: Put a few garlic cloves into the round chamber, then roll the green wheels along the countertop to chop. More rolling gives a finer mince, while less results in a coarser chop. Easily disassembles for cleaning. *UPDATE: I don't like mincing garlic so bought one of these & it's a game-changer, saves so much time! I do wish they'd include a small tool to brush out all the chopped garlic. The blades are incredibly sharp so care must be taken when removing garlic & when washing (it's dishwasher safe).

An amazingly simple recipe considering the depth of flavor it delivers. Fresh green beans are preferred, but frozen or even canned will work. Use red or Yukon Gold potatoes. Fry the bacon & ham, then make a light roux. Add onions, garlic, & Cajun seasoning. Stir in some stock, then add green beans & stir to coat. Return the meat to the pot, add chicken stock to cover, & simmer 30 minutes. Add chicken broth, jasmine rice, & boneless skinless chicken (thighs or breast). Simmer ≈20 minutes until chicken is done & rice is just tender. Remove chicken pieces & slice or shred, & mix the meat back into the soup. Stir in lemon juice & fresh chopped parsley.  Serves 6. Serve over hot rice with fresh French bread for dipping. (*Use freshly boiled or frozen crawfish, thawed. Avoid imported crawfish. Can also use shrimp.) *UPDATE: Made this with shrimp, adding a little tomato sauce & dash of Worcestershire. Family really liked it.

Additionally, environmental problems caused by shrimp farms, use of antibiotics, & lack of sanitation in processing, all make imported Indian shrimp very questionable.
