Tiropita (Greek Feta cheese Pie). I liked how this turned out, but I would change a couple things the next time I make it. I think the gouda was overpowering, so next time I'll add more feta and put in less gouda. The mint is nice, but I think I'll experiment with some more spices in addition to that. Instead of a single layer of cheese mixture in the center I did 2 layers of cheese with a layer of phyllo sheets in the middle because I like an extra crunch (and phyllo is just delicious).
