Complex carbs (ex.rice, grains, etc) are better for you because they provide energy, makes you fuller with fewer calories, theyre high in nutrients, and they boost your metabolism. OMG -- West African Peanut Stew.   To make it vegan, swap out a can of chickpeas for the chicken & use veg broth.   I also added diced red peppers, 1/2 tsp cumin, 1/2 tsp curry, 1/4 tsp cinnamon, 1/4 tsp chili powder. Garnish with red pepper flakes until it's hot enough for ya.  Didn't have collards/kale, so I added plain old frozen spinach (slightly thawed) in the last 5 minutes, with no detrimental effects.
