The #iqs8wp 'it's always spring frittata' - I made a giant family-sized baked one, and added a bunch of leftover shredded Brussels sprouts (fried off with the zucchini). topped with fetta and drizzled with a little whole-lemon EVO. There's even a little piece leftover for my breakfast tomorrow.

My version is more of a 'pile' than a 'stack', but we still thought this #iqs8wp grilled vegetable and ricotta stack with pesto was delicious! Even my husband liked it - neither of us missed the meat. I bought waaay too much ricotta (which I could happily eat by the spoon), so I've made some batter for #IQS corn fritters for breakfast tomorrow, which I intend to have with lashings (I just like that word) of fresh ricotta
