Stuffed Cabbage Rolls are an excellent way to use fall foods.  Simply sauté any assortment of veggies you get at the market, add seasonings and cheeses to your liking and stuff cabbage leaves (roll it like a burrito).  Then, place your rolls in an oven-safe dish, cover with a sauce of your choosing and bake at 350 for 25-30 minutes.
