Twice baked ham baked potato (8PPvs) Pop a 200g jacket potato in the microwave and allow to cool. Carefully scoop out the flesh, mash with a fork and stir in 1/2 tbsp light mayo, a touch of mustard, 25g half fat cheddar, chopped spring onion, chopped parsley and 25g ham. Heap the mix back into the potato skins and micro for 2 mins. Yum! Taken from April 2012 issue.
