I <3 pancakes!! But they're not on my current clean eating plan. So, I cleaned up my regular recipe and am loving these for my afternoon snack.  Low Carb Protein Pancakes  1 over ripe banana 1 scoop protein powder (low carb/sugar)  1 egg  I blended it in my Vitamix and added a few scoops of chocolate PB2 powder (powdered peanut butter) to thicken it up.
