Quinoa Veggie Burgers (4) - Boil 1/2 cup raw quinoa on low for 14 min. In food processor pulse Quinoa & 1 diced carrot, 1/2 c minced onion, 2 cloves garlic,15 oz can black beans, rinsed, 1/4 c Italian breadcrumbs, 1 lg egg, 1 tbsp gr cumin, ¾ tsp salt, ½ tsp pepper, 1 tbsp olive oil till combined but slightly chunky. Form into 4 patties. Cook in oil coated skillet on med until browned, about 8 min per side.
