Lobster Rolls - these scream summer to me! Great for a special lunch. Chunks of fresh chilled lobster tossed with celery, shallots, chives, light mayonnaise and a little lemon zest served on a hot dog bun. 6 points+ on Weight Watchers.
My dad is practically borderline vegetarian lately but his "i can eat this forever" comfort food is Ceviche. He makes tons of variations of it but I'm allergic to fish and NOT shellfish so I like shrimp ceviche. Mmm with tostadas and Valentina.
