Killer quick coconut custard.  Vegetarian (not vegan), 100% gluten free and massively healthy.  Ok, here you go. This will take you 4 minutes total to get into the oven!    4 eggs 1/4 tsp salt1/4 tsp Ginger (I used much more!)2 cups coconut milk (a tin can full is what you need, about 14oz) 1/2 cup honey2 tsp vanilla extract and a handful or two of shredded coconut if youd like. Whisk it all up and bake in a pie pan at 350 for about 30 minutes or till its all set
