Fava Bean & Cilantro Mash (vegan, oil-free, gluten-free)

This mash would make a main dish by its own. It has all it takes: good amount of protein (24 %, including all essential aminoacids), carbohydrates (to keep those cells running smoothly) and an important amount of folic acid, iron, copper, manganese, magnesium, phosphorus and zinc. This time I matched it with Roasted Pumpkin with Sage and Green & Pink Pepper and it was a perfect combination.
