Roasted Okra, this was fantastic!!!!! I roasted it at 425 for close to 30 minutes, since I used frozen okra, stirred it half way through and then sprinkled with more salt before serving, seriously could eat this like popcorn!  My husband loved it too, and he doesn't like okra.

I am an avowed enemy of all things okra and have been since I was a kid, but this was actually yummy enough that I ate a whole pan by myself for lunch. NO SLIME if you bake them long enough! I used two tsp of evoo and sea salt for a pan

Roasted okra - washed dried, chopped, olive oil salt pepper, use foil for easy clean up Oven 425 degrees 15 min SO good! If you cook them long enough, they are super crispy and have a slight 'fried' taste.

Roasted Okra...made this tonight and my kids loved them!  Roasting them makes the slime go away and they taste like fried okra!

Roasted Okra: fresh okra, olive oil, salt & pepper, red pepper flakes [optional]. Preheat oven to 450F. Line a baking sheet with aluminum foil. Toss or spray okra with oil. Sprinkle with salt, pepper, and chile flakes, if using. Roast ~20 minutes (shaking pan after ten minutes to turn pods) or until okra is sizzling and covered in crispy brown -- not black-- spots. Serve immediately.
